I didn’t have anything in the house so I pulled this together with ingredients I had on hand. The kids loved it and never knew it was turkey!
(You can leave these beans out but I don’t know what it will taste like without the bean gravy though).
2 cups dried pinto beans
1 tbls kosher salt
1 qt. of water
Soak the beans for about 20 min. in really hot water, rinse, drain, add salt, quart of water and then boil vigorously until the beans are soft (1.5 hours). You may need to add some more water but what you are trying to do is get the beans soft at the same time you boil them down to a gravy.
(Chili)
2 tbls Extra Virgin Olive Oil
1 lg white onion diced
5 cloves of garlic minced
1 tbls. tomato paste
1 1/2 lbs. ground turkey
1 tsp. salt
1/2 tsp. ground pepper
2 tsp. chili powder
1/2 tsp. chipotle chili powder
2 tbls. cumin
1 tbls. oregano
4 cups chicken broth
1 small can of V8 juice
1 can Rotel Tomatoes w/ green chilies
2 cans diced tomatoes
Heat the olive oil in a heavy bottom pot on medium heat. Add onions, garlic and tomato paste and cook until onions are soft, stirring frequently. Add ground turkey and break up. Add the remaining spices and simmer for a couple more minutes, stirring occationally. Deglaze the mixture with the chicken broth then add the remaining ingredients. Simmer until you get the consistentcy you want. Once there, add the beans along with their gravy. Stir and simmer for about another 5 min. Taste and adjust salt to taste. Serve with sour cream, chopped fresh cilantro, chopped scallions and shredded cheddar cheese.

Ann and Gabe have run the deli at work for years. They have many wonderful traditional dishes they brought to us from their homeland of Greece. I like this dressing so much I’m considering keeping a small bottle of it in my purse for salads a other restaurants (just like my Grandmother Kaki did with her Catalina dressing)!
